Ferment Foodies – Valentine’s Stout Truffles

Valentine’s day has arrived, and we’ll use any excuse to pair beer and chocolate! Here we’re going to feature a Stout Truffle recipe that is sure to earn you a little extra treat from your sweetheart.

Stout Truffles:

  • 12 oz of Union Street Stout
  • 4 oz (1/2 cup) heavy cream
  • 12 oz semi-sweet chocolate, finely chopped
  • 2 TBSP unsalted butter, at room temperature
  • 1/2 cup cocoa powder, for rolling the truffles
  • 1 lb chocolate candy coating
  • Toppings like crushed pretzels, crushed potato chips, peanuts, etc

1. Pour the stout into a saucepan, and reduce for about 20 minutes. You want to end up with 1/2 cup. Remove from heat and set to the side.

2. In the same saucepan, pour the heavy cream and bring to a simmer. In a medium mixing bowl, add the semi-sweet chocolate and pour the warm stout over to melt the chocolate. Whisk to smooth out the mixture.

3. Once cream is to a simmer, add to chocolate and stout mixture and continue to whisk together until silky smooth.

4. Whisk in the unsalted butter. Once combined, cover with plastic wrap and let chill in the refrigerator for 2 hours. ( This is a great time to sip on the rest of the stout you grabbed!)

5. Line a baking sheet with parchment paper. Put Cocoa powder in a small dip. Scoop about a tablespoon of the truffle mix, and form into a ball. Coat in the cocoa powers and place on the baking sheet. You should get about 36 1-inch balls.

6. Refrigerate the tray for 30 minutes until firm.

7. Melt your candy coating in a microwave-safe dish, stirring every 30 seconds. (If you prefer, you can skip this step and simply coat the truffles in salty treats along with the cocoa in step #5.)

8. Use a fork to dip a truffle into the melted coating, then remove it and let the excess drip back into the bowl. Set the truffle on the prepared baking sheet and, while the chocolate is still wet, sprinkle the top with a pinch of crushed pretzels, crushed potato chips, sea salt, or your topping of choice.

9. These are best served at room temperature. Store extra truffles in an airtight container in the refrigerator for up to two weeks, and bring them to room temperature before serving.
